Its most authentic shape, however, remains the sugar loaf, a result of the procedures used in the past to produce it: the Persians used to fill hot sugar-cane juice into cone-shaped wooden vessels. An opening in the apex allowed the substances containing no sugar to escape from the crystallizing sugar mass.
